For the Kyiv filling
2 tablespoons low-fat butter spread
4 tablespoons low-fat cream cheese
2 tablespoons flat-leaf parsley, chopped
3 garlic cloves, finely diced

Preheat the oven to 200°C/180°C fan/400°F/Gas mark 6.
To make the filling, mix all the ingredients together in a bowl until combined. Divide into 12 equal-sized balls, place on a baking tray (sheet), then transfer to the freezer for about 20 minutes until solid.
Use your hands to split the chicken mince into 12 portions, then roll each into a ball. Press down in the middle of the ball to make a dent, then press a frozen garlic butter ball into the middle. Use your hands to mould the chicken around the garlic butter, making sure it is fully covered.
Blitz the wholemeal bread in a food processor or blender until you have breadcrumbs and place in a bowl with the paprika and a pinch of salt and pepper.
Put the egg into a separate bowl. The key to breadcrumbing is to make sure you use a different hand for the wet ingredients then you do for the dry ingredients. So use one hand to pick up the chicken ball and put it in the egg, the same hand to take it out of the egg and drop it into the breadcrumbs, then use the other hand to take it out of the breadcrumbs. This prevents you from breadcrumbing your fingers! Repeat this process twice so that the balls are evenly coated in the breadcrumbs.
Lay the balls out on a baking tray (sheet), spray with low-calorie cooking spray and bake for 25 minutes until crisp and golden.
Bring the potatoes to the boil in a saucepan of salted water and cook for 15 minutes. Drain, then return them to the pan. Use a potato masher to crush and mash the potatoes. Then use a whisk to whisk and whip the potatoes until they are completely smooth in texture. Add a pinch of salt and pepper to taste, then serve with the Kyivs.
